Aurum Ruby is our take on a classic red wine - a deep red mead made from honey and red fruits, also traditionally called a melomel.
Local white mahogany honey is co-fermented with premium fruit - blackcurrant, raspberry and sour cherry - and aged on skins.
A bright translucent ruby red in the glass, the nose is expressive with an exuberant aroma of zingy red berries and a surprising old world earthiness overlayed with a cherry sweetness.
Complex, fruity, fresh yet dry, with a lingering honey final note that pleasantly coats the palate.
After an extended period of time in French oak barrels, this mead has been resting in our cellars until its release and will continue to age gracefully over the next few years.
NB: This vintage mead comes with a premium cork and wax closure.
