Sparkling Rosé

Aurum Rose Gold is a sparkling rose made from pure raw macadamia honey from the Byron Bay hinterland, co-fermented with exotic and native spices including rosella and strawberry gum leaf.

The colour is a luminous blush pink with golden copper hues, glowing with fine champagne-style bubbles. 

Expressive aromas of fresh pink grapefruit and wild strawberries, a complex medium body with hints of brioche and caramelised nuts in the final notes. 

Length and refreshing fruitiness characterise this sparkling modern honey mead.

Drink chilled and enjoy as the perfect celebratory bubbles or aperitif.   

Best served in a balloon champagne flute.

Still White 

Aurum White Gold is a still white mead made from a selection of honey from bees foraging on spring macadamia blossoms and clover flowers from an organic macadamia farm in the Byron Bay surrounds.

A fresh and subtle nose with aromas of ripe pear, citrus blossom and fresh honey notes.

A balanced combination of lemon zest and white flowers with lightly grilled macadamia nut and a lingering honeycomb character.

An elegant textural medium-light bodied wine, finishing dry and lively - this is a pure expression of the exceptional nectar from our coastal lands.

10% alc/vol.

Aurum Ruby Red
Aurum RUBY

Still Red

Aurum Ruby is our take on a classic red wine - a deep red mead made from honey and red fruits, also traditionally called a melomel.

Local white mahogany honey is co-fermented with premium fruit - blackcurrant, raspberry and sour cherry - and aged on skins.

A bright translucent ruby red in the glass, the nose is expressive with an exuberant aroma of zingy red berries and a surprising old world earthiness.

Complex, fruity, fresh yet dry, with a lingering honey final note that pleasantly coats the palate.

Aged for an extended period of time in French oak barrels, this mead is flamboyant in its youth but will really perform in the next few years and can be aged for years. 

14.5% alc/vol.

Eau de Vie

Crafted in collaboration with a local distillery and inspired by the century-old tradition of French Eau de Vie, we extract the essence of our best aged rare honey wines to create a crisp, pure and complex white spirit.

Aurum Mead Eau de Vie can be sipped neat as an aperitif or digestive or use as an alternative for white spirit cocktails.

A very limited production, each bottle has been numbered individually for the collector.

Currently available through Lord Byron Distillery and local Byron shire bottleshops.
