Balanced acidity and refined medium body, with hints of brioche and lemon tart and a soft lengthy finish.

Sparkling Rosé

Aurum Rose Gold is a sparkling rosé made from pure raw macadamia honey from the Byron Bay hinterland, co-fermented with exotic and native spices including rosella and strawberry gum leaf.

The colour is a luminous blush pink with golden copper hues, glowing with fine champagne-style bubbles. 

Expressive aromas of fresh pink grapefruit and wild strawberries, a complex medium body with hints of brioche and caramelised nuts in the final notes. 

Length and refreshing fruitiness characterise this sparkling modern honey mead.

Drink chilled and enjoy as the perfect celebratory bubbles or aperitif.   

Best served in a balloon champagne flute.

AURUM WHITE GOLD

White Mead

Aurum White Gold is a still white mead made from a selection of honey from bees foraging on spring macadamia blossoms and clover flowers from an organic macadamia farm in the Byron Bay surrounds.

A subtle nose of green apple and citrus blossom with fresh honey notes and bright minerality.

A balanced combination of lemon zest and white flowers with lightly grilled macadamia nut and lingering chardonnay characteristics.

An elegant textural medium-bodied mead with a luscious, smooth and silky mouthfeel - this is a pure expression of the exceptional nectar from our coastal lands.

100% pure Byron Bay honey.

AURUM ROSE

Rosé Mead

Aurum Rose is a still mead inspired by the iconic rosé wines of Provence in the south of France.   

Made from Byron Bay's finest hinterland honey and our proprietary blend of organic spices, this mead achieves the perfect balance of acidity and freshness.

A fresh and subtle nose of tart strawberry, redcurrant and honeysuckle, this is a bright, dry and fruity mead with a crisp finish, perfect for summer evenings. 

Enjoy chilled as you would a French rosé.

Aurum RUBY

Red Melomel 
Vintage 2020

Aurum Ruby is our take on a classic red wine - a ruby red mead made from honey and red fruits, also traditionally called a melomel.

Byron Bay spring honey is co-fermented with premium fruit - blackcurrant, raspberry, wild blueberry and sour cherry - and aged on skins.

A bright translucent ruby red in the glass, the nose is expressive with an exuberant aroma of zingy red berries and juicy sour cherries.

Complex, fruity, fresh yet dry, with a lingering honey final note that pleasantly coats the palate, reminiscent of a French Gamay.

Aged for an extended period of time in French oak barrels, this mead is flamboyant in its youth but will really perform in the next few years and can be aged for years to come.

100% pure Byron Bay honey.  Red fruits - sour cherry, blackcurrant, raspberry and wild blueberry.

Aurum RUBY

Red Mead - Melomel
Vintage 2018 - cork

Aurum Ruby is our take on a classic red wine - a deep red mead made from honey and red fruits, also traditionally called a melomel.

Local white mahogany honey is co-fermented with premium fruit - blackcurrant, raspberry and sour cherry - and aged on skins.

A bright translucent ruby red in the glass, the nose is expressive with an exuberant aroma of zingy red berries and a surprising old world earthiness overlayed with a cherry sweetness.

Complex, fruity, fresh yet dry, with a lingering honey final note that pleasantly coats the palate.

After an extended period of time in French oak barrels, this mead has been resting in our cellars until its release and will continue to age gracefully over the next few years.

NB: This vintage mead comes with a premium cork and wax closure.

Aurum Bronze is a semi-sweet barrel-aged dessert style mead.

Inspired by a 600-year-old French tradition, this modern mead is made by fermenting premium caramelised dark winter honey, also called a bochet.

Intense aromas of vanilla icecream, caramel and fruits confits on the nose, a complex combination of grilled nuts, orange, dark honey and sweet spices, with a creamy mouthfeel.

Rich and decadent with a balanced sweetness, this bochet is lush with a delicious honeyed finish.

Drink as you would a dessert wine. Pairs well with patisserie and Christmas pudding.

100% pure Byron Bay dark honey. Tonka beans. Barrel-aged.

A meeting of the minds between traditional grape wine and mead, this pyment is elegant and fresh, and thoroughly food-friendly.

Pushing the boundaries between mead and wine, this pyment has an exuberant nose of peach, strawberries and cream, with a hint of blood orange, and the colour sits between that of an orange wine and a rosé.

Aurum Vieux Bochet is a fortified semi-sweet barrel-aged dessert style mead.

Inspired by a 600-year-old French tradition, this modern mead, also called a bochet, is made by fermenting premium caramelised dark winter honey, which is then fortified.

Old-world French aged brandy notes, with complex aromas of crème brulée and toffee on the nose.

Layers of caramel, Christmas pudding and bittersweet orange, with complex woody undertones and a luscious lingering mouthfeel.

Drink as you would a port.
